Commemorative Cap Classique
The Wine
For the 175 Celebration, Silverthorn has produced a wonderful Méthode Cap Classique which we have called the Commemorative MCC. This MCC is made from 100% Colombar grapes, from well-established vineyards of between 30 and 40 years old. 50% of the base wine was fermented in Acacia barrels. This is a wonderful accompaniment for any sparkling occasion.
The Maker
John Loubser (Founders OD) and his wife developed her father’s fledgling wine farm on the banks of the Breede River into one of the top producers of South African MCC today. Having worked as cellar master at some high profile wineries, John has since 2018 been fully involved at Silverthorn, where with Karen and his family-led team, they have garnered some of the top awards for their signature MCCs, The Genie, The Green Man and The Jewelbox. Silverthorn Wines has truly established itself as a world-class Cap Classique brand and destination.
The Crits
Top notes of hay and dried herbs before white peach and a hint of biscuit on the nose while the palate is lean with racy acidity and a fine mousse, the finish bone-dry.
